They're called Carmelitas

These are amazing. There is just no other way to describe them even if I tried...Okay, I'll try: caramel gooyness, creamy chocolate, buttery crust...best when warmed in the microwave for 20 secs! I want another piece. So delicious.
The next time I make these will be when I need to take a dessert somewhere. Everyone will die and beg me for the recipe. I can't have a whole batch of this at home.

Cabin fever leads to this...

I've been stuck in the house for 3 days because it's snowing and my car can't make it anywhere. And mostly because us Seattle people just don't know how to handle the snow. We're either gasping at the beauty or cursing at the inconvenience of the snow. I tried to be productive today and I feel like I have accomplished everything I could on a snow day (3rd day in a row):
- I went for a walk in my neighborhood.
- I attempted to add to the snowman that I made yesterday, but the snow was too powdery. Fail.
- I drank 2 cups of tea and 1 mug of hot coco and cuddled underneath a blanket.
- I watched a couple hours of tv and browsed Pinterest/blogs.
- I lifted some weights then took a hot shower.
- I ate my breakfast, lunch, and dinner.
- And I made this:
Super great. Super easy.
Something I wish I didn't know about because I'm positive I will make this again.

nutella and peanut butter recipe!

i love nutella and i have blogged about my love for nutella before.

one of my all time favorite snacks is a nutella and peanut butter sandwich. if you decide to try it, pour yourself a glass of milk too!

great chicken recipe

combine the following

1/3 cup lemon juice
1/4 cup olive oil
1 tablespoon Dijon mustard
2 large cloves garlic, finely chopped
2 tablespoons of finely chopped fresh rosemary
1/2 teaspoon salt
1/4 teaspoon ground black pepper

preparation:

-use 2/3 of the marinade to cover 4 skinless, boneless chicken breast halves. let it marinate for 30 min in fridge.

-place marinated chicken in an appropriately sized pyrex, cover the chicken w/ the rest of the marinade

-bake in oven for 45 min at 375 (would be fantastic for the grill too)

it turns out so so so juicy and delicious!

candy cane christmas cupcakes


i'm sure these would be a hit at any christmas party!!

Candy Cane Christmas Cupcakes
2 large eggs
1/2 cup sugar
1/2 cup milk (low fat is fine)
1/2 cup vegetable oil
1 tsp vanilla extract
1 1/4 tsp peppermint extract
1 cup all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp red food coloring

Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.In a large bowl, mix together eggs and sugar until mixture is light and creamy and the sugar has mostly been dissolved. Stir in milk, vegetable oil, vanilla and peppermint extracts.In a medium bowl, whisk together flour, baking powder and salt. Pour into wet ingredients and whisk just until batter is smooth. Measure out one cup of batter and place it back in the medium bowl. Add red food coloring to this bowl and whisk to incorporate.Put a spoonful (approx 2-3 tsp) of the white batter into the center each cupcake paper and let it spread slightly on its own. Put a spoonful of red batter in the center of the white. It will push out the other batter and, as it sits for a moment, will also spread itself. Alternating spoonfuls of the two batters and trying to keep the amounts as even as possible (after the first layer, I used smaller amounts of red and white with each spoonful), repeat the technique until all the batter has been used up.Bake for about 15 minutes, until a tester inserted into the center of each cupcake comes out clean and the top springs back when lightly pressed.Cool completely on a wire rack before frosting.


Vanilla Cream Cheese Frosting
4-oz cream cheese, room temperature
1/4 cup butter, room temperature
1 tsp vanilla extract
2 tbsp milk
2-3 cups confectioners’ sugar
green food coloring (optional, but recommended for the holidays)
In a medium bowl, combine cream cheese and butter. Beat until smooth, then mix in vanilla extract, milk and 1 cup of confectioners’ sugar. Beat until very smooth, then gradually blend in additional sugar until frosting is fluffy, thick and easy to spread. Beat in up to 1/2 tsp green food coloring to dye the frosting, if you wish.Frosting can be spread onto the cupcakes or piped on using a piping bag.

pecan pumpkin filled pancakes

i found this recipe on the williams-sonoma website.

Ingredients:
4 oz. cream cheese, at room temperature
1 cup pecan pumpkin butter
2 cups all-purpose flour
2 Tbs. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
4 eggs, separated
2 cups buttermilk
4 Tbs. (1/2 stick) melted unsalted butter, plus more for cooking

an ebelskiver pancake pan was used to make these bundles of yumminess. but i was wondering if a pancake puff pan would work as well! i'll be honest, i actually sat through the entire infomercial for the pancake puff pan. oh the ideas that raced through my head! has anyone actually ordered one? what do you think?...i'm seriously thinking of getting one :)
