1/3 cup lemon juice
1/4 cup olive oil
1 tablespoon Dijon mustard
2 large cloves garlic, finely chopped
2 tablespoons of finely chopped fresh rosemary
1/2 teaspoon salt
1/4 teaspoon ground black pepper
-use 2/3 of the marinade to cover 4 skinless, boneless chicken breast halves. let it marinate for 30 min in fridge.
-place marinated chicken in an appropriately sized pyrex, cover the chicken w/ the rest of the marinade
-bake in oven for 45 min at 375 (would be fantastic for the grill too)
it turns out so so so juicy and delicious!
